How to make a delicious fakeaway pizza with fresh yeast
It’s been an awfully long time since I’ve made an homemade pizza, and so this one turned out quite a bit thicker than expected! However, if you’re making it along with this recipe, simply divide the dough in two and make two pizzas.
Typically, a lot of my pizzas are made with sourdough yeast, as I find it gives an airier texture and interesting flavour. This fresh yeast pizza, however, rises like crazy, and has a slightly sweet flavour that I absolutely love!
First things first, let’s make the dough. This is a pretty simple dough where the kneading takes place while you’re mixing in a lot of the ingredients. Here, I’ve just thrown everything aside from the olive oil into a high-sided pot. Give them a gentle mix to combine them all together, and then turn out the shaggy dough.
Give this a generous knead, and eventually, you’ll form a smooth ball of dough as the gluten in your pizza base develops. Not sure if your dough’s smooth enough? Keep kneading!
As with any good pizza dough, this contains quite a bit of olive oil. As much as it isn’t healthy, it will help your dough to not stick to the pan, as well as making it a lot lighter and richer after baking.
Roll your dough into a smooth ball with a taut skin, and then make a small well in the centre. Add in roughly two tablespoons of olive oil, and then knead it to combine! Once you’re happy that the oil’s combined into the dough, you can set it back inside the mixing bowl, and let it rest and rise for thirty minutes.
Ideally, make a more or less airtight seal with some cling film, but if you don’t have any then you can use a tea towel, and place the saucepan’s lid on tightly.
The sauce I made here is a really simple one that I make when I’m doing a quick pizza like this. It’s tomato puree with a few herbs and some water to achieve the right consistency. It isn’t the best I’ve ever made, but it’s delicious and quick for a fast pizza like this.
If you have a pizza stone, then now’s the time to put it in the oven and make sure it’s heated. I don’t have one of these, so instead, I’m using a cast iron griddle, turned upside down. It gets really hot, and works a charm! If in doubt, place a baking sheet beneath the shelf you’re planning to cook the pizza on, that’ll help crisp the base of the pizza really well.
Here I’m using a piece of tinfoil, which I’ve folded to the size of my griddle before putting it in the oven. This will let me assemble the pizza on the counter, before sliding the tinfoil (pizza and all) onto the griddle. Then, into the oven!
Make sure you’re oven’s at maximum temperature, and that your griddle or baking sheet is hot, and you’re sure to make a masterpiece. This homemade pizza rose far more than I was expecting it to so perfect if you like a deep pan pizza. Otherwise, halve the dough and make two pizzas.

Fresh Yeast Pizza
An easy to make delicious pizza dough with toppings for a basic cheese and tomato pizza
- Total Time: 50 minutes
- Yield: 6 Portions 1x
Ingredients
1 packet of active yeast.
590ml room temperature water.
900g plain or bread flour.
1/2 teaspoon sugar.
1/2 teaspoon salt.
2 tablespoons olive oil.
Flour to dust the worksurface with.
Sauce:
Three to four tablespoons of tomato puree.
1 tsp oregano.
1 tsp basil.
1 tsp garlic granules.
Salt and pepper to taste.
Roughly 50ml of water, to achieve sauce consistency.
Instructions
Combine all the ingredients except for oil in a large mixing bowl. Mix until a shaggy dough forms, and then turn out.
Knead until a soft, supple ball of dough with taut skin forms.
Make a small well and add the olive oil, then knead thoroughly to combine.
Replace into the mixing bowl and cover for a half-hour rest and rise. Preheat the oven to the maximum temperature, grate some cheese and make your sauce. Simple combine all the sauce ingredients in a bowl and taste for seasoning. Dilute with a little water in order to achieve a good consistency.
Assemble your pizza on the tinfoil or baking paper that it will go into the oven on, and then place in the oven to bake for ten minutes at the most.
Remove from the oven, slice, and eat!
