Unofficial Slimming World Red Pepper and Butternut Squash soup recipe

This roasted red pepper and butternut squash soup is really tasty whilst being so easy to make. It is quite sweet in taste and full of flavour.

Soup is perfect to keep you warm in the winter but I also love it in the summer as a quick meal to reheat without being too heavy.

Soup making tips

If you enjoy soup then these tips could help you.

  • Use reduced or yellow sticker vegetables where you can, you wont taste any difference but it will save money.
  • If you use a soup maker remember to defrost any frozen vegetables first as it works much more smoothly that way.
  • Soup is a great snack on cold winter evenings and could be a good alternative to other comfort foods. If you always make a little extra and freeze some you could have a choice in the freezer every time you need a snack or a bit of warmth.
  • Soup is a great way to get extra vegetables into your diet. Why not add a mug of this butternut squash soup to a meal that doesn’t have vegetables in as an alternative to a side portion of vegetables for a change?

This recipe is perfect to make in a soup maker and can be used with the chunky soup function or the smooth function depending on how you prefer.

Butternut squash tips

If you are put off using a butternut squash because it is hard to peel then these tips could help you out.

  • Instead of trying to scoop all the seeds out just cut around them. This is much easier as the stringy seeds can be difficult to remove.
  • Cut a butternut squash in half length-ways and microwave for 5 minutes to soften it slightly so it is easier to peel off the skin with a potato peeler.
  • Consider leaving the skin on. In some recipes, like this roasted red pepper and butternut squash soup, it really will do no harm to leave the skin on. A chunky soup for example that has been well-cooked can be just as nice with the butternut squash cut into chunks with the skin on.
  • If you really don’t want to peel a butternut squash then buy ready cut cubes in the fridge or freezers of the supermarket!

Description

A tasty warming roasted red pepper and butternut squash soup full of flavour but easy to make. Be sure to make plenty as you will love it!


Ingredients

Scale

1 Large Butternut Squash (deseeded and cut into chunks)

700 ml Vegetable Stock

4 Roasted Red Peppers From a jar in brine not oil and drained.


Instructions

Place the stock and Butternut squash into a large saucepan and bring to the boil. Reduce the heat and simmer for 20 minutes.

Chop the red peppers into small chunks and add to the Butternut Squash mixture.

Allow to cool if preferred for safety depending on the type of blender you use. Then blend until smooth.

Reheat if needed and serve, season if required.
