Easy chilli chicken ramen recipe for all the family

You can’t beat a flavoursome ramen, and this chilli chicken ramen is one that you can easily make at home that tastes incredible. Packed full of flavour and simple to make, this is guaranteed to become a firm family favourite.

Origins of Ramen Noodles

Did you know that ramen noodles have been around for over a century? Originally introduced to Japan from China, ramen underwent a culinary evolution and has since become a beloved Japanese dish with countless regional and international variations.

The key components of ramen noodles are wheat flour, salt, and water, but the broth/stock, toppings, and seasonings vary depending on the recipe.

Traditional ramen is made with pork bone broth, sliced pork, bamboo shoots, and a seasoned boiled egg.

However, vegetarian and vegan versions are also available, featuring vegetable broth, tofu, mushrooms, and other plant-based ingredients.

Often when you head out to eat with friends or as a family you may choose a restaurant that cooks things you wouldn’t ordinarily make at home and let’s face it, Japanese food is probably high on the list if you love those sorts of flavours.

However, I am here to tell you that you can make one of the most popular Japanese dishes, ramen, at home, and it’s much simpler than you may have thought.

You have those spicy yet salty flavours we know and love from Asian cuisine, and chicken and noodles bring everything together.

This recipe is a great way to introduce children to those flavours and a delicious meal everyone will love. So here is everything you need to know about making chilli chicken ramen at home.

Ingredients needed to make the Chilli Chicken Ramen 

First, it is a good idea to ensure you can get all the ingredients together. Focusing on this first means that the cooking process will be simple. You will need:

  • 10g of coriander
  • 1/2 a lime
  • 1 red chilli
  • 130g of medium egg noodles
  • 1 chicken stock cube
  • 15ml of soy sauce
  • 25ml of Sriracha hot chilli sauce sachets
  • 1 large chicken breast fillet
  • 1 spring onion
  • 15g of fresh root ginger
  • 1 red onion

How to make the Chilli Chicken Ramen

Now that you have all your ingredients to hand it is time to make the chicken ramen. 

This recipe serves 2 but you could easily double the ingredients to make four portions or multiply however you need.

First of all, you will want to preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7.

Boil a kettle ready so that you have hot water. Then peel and finely grate the ginger, then combine it in a bowl with the soy sauce. This will create ginger and soy marinade. Set aside.

Place your hand flat onto the chicken breast and slice it in half as if you were cutting a burger bun. This will give you two thinner pieces of chicken breast.

Add the sliced chicken to the ginger soy marinade and give everything a good mix up and let it marinade for a little while. 

Line a baking tray with baking paper and then add the chicken to the tray and put the tray in the oven for 12-15 min or until cooked through.

While the chicken is cooking, peel and slice the red onion[s] (as finely as you can!) and also slice the red chilli finely. You can also trim, then slice the spring onion finely and cut 1/2 lime into wedges. Lastly, pick the coriander leaves from their stalks. 

Dissolve the chicken stock cube and Sriracha hot chilli sauce in 500ml of boiled water. This is your spicy ramen base.

Add the spicy ramen base to a pot over very low heat and cook for 5-6 min or until warmed through. At this point re-boil the kettle. 

Add the medium egg noodles to a separate pot and cover them with boiled water until fully submerged

Bring to a boil over high heat and cook for 5-6 min or until cooked with a slight bite. Once they are done, drain and set aside.

Remove the cooked chicken when it’s cooked from the oven and slice it finely.

Add the drained noodles to deep bowls and pour over the spicy ramen base

Top with the sliced chicken, sliced red chilli (only add as much heat as you can handle), a handful of sliced red onion, spring onion, coriander leaves, and a lime wedge

Recipe notes and tips

When it comes to any recipe, it is always a good idea to understand what notes and tips you can use to help you fully utilise the recipe and succeed each time.

If you want to make the most out of these delicious noodles, then here are some recipe notes and tips to help.

A great way to peel the skin off the ginger is to use a teaspoon and scrape it off. It works really well and ensures you don’t waste any of the ginger flesh. 

Make sure the chicken is cooked through. You don’t want any pink flesh when you cut into the chicken. 

If you don’t want too much heat, then deseed the chilli. This is the hottest part of the chilli. 

Double up the quantities to make it for four people.

Variations to try

Like with many recipes, once you have tried them out a few times you can look to make some changes and vary the recipe to suit your tastes and preferences. So I wanted to share with you some of them that you might want to try. 

You could make this with cooked and shredded chicken. You can add the sauce to the cooked chicken and then add it to the ramen. 

Just like they do in some restaurants, why not add half a boiled egg? 

You can control the heat by only adding a little red chilli. You could also use chilli flakes instead of fresh chilli. 

Why not add some different vegetables? Ribbons of courgette and carrot would work well with this and you can add them raw. They will take on the flavours perfectly.

Can I eat this ramen on Slimming World or other diets?

This recipe uses ingredients that are all classed as free foods on the Slimming World diet at the moment, so provided you do not use ready-cooked noodles, you can enjoy it on the diet easily.

Other diets with similar rules are likely to be the same as this is such a wholesome meal with easy fresh ingredients and dry noodles. Check your plan for yourself, however, to ensure you keep on top of any changes.

How should I serve the Chilli Chicken Ramen?

This is a complete meal, but you could also serve it with some traditional side dishes such as gyozas or bao buns.

You could also dip in some crusty bread as a breakaway tradition to mop up all that delicious ramen base.

If you want to serve this for guests you could even buy some Ramen bowls and spoons similar to mine.

How do I store the Chilli Chicken Ramen?

If you have any leftovers then let them cool and add to an airtight container. You can then reheat it on the stove.

It will last up to three days in the fridge. The best advice is to separate the noodles from the broth when storing.
