Chicken and Bacon Dirty Rice: A Healthy, Slimming World Friendly Family Favourite
If you are stuck in a dinner rut and need something that is packed with flavour but won’t ruin your diet, this chicken and bacon dirty rice is perfect. It is one of those meals that tastes like a treat but is actually full of goodness.
When you are trying to lose weight or just eat a bit better, it can feel like you are stuck eating plain chicken and boiled vegetables every night. That gets boring very quickly. This recipe proves that you can have amazing flavours without the calories or fat. It is smoky, savoury, and filling enough to keep the whole family happy.
In this guide, I will share how to make dirty rice, why it works for plans like Slimming World, and how to keep your rice dishes safe to eat.

What exactly is dirty rice?
“Dirty rice” might not sound like the most appetising name, but it is delicious. It is a traditional dish from Louisiana in the United States. The “dirty” part just refers to the colour of the rice. White rice gets “dirty” when cooked with small pieces of meat, spices, and vegetables, turning it a lovely golden-brown colour.
Traditionally, dirty rice is made with chicken livers and plenty of fat. This recipe, however, swaps these ingredients for lean chicken breast and bacon medallions. This keeps all that comforting flavour but makes it much lighter and healthier.
Why this recipe is perfect for weight loss
You might think rice dishes are off the menu when dieting, but that is not true. Rice is a great source of starchy carbohydrate, which the NHS Eatwell Guide says should make up just over a third of what we eat. The main thing is how you cook it. Here is why this dirty rice recipe is perfect:
1. Lean Protein
Using chicken breast with the skin removed and bacon medallions with all the white fat cut off gives you plenty of protein to keep you full without the extra saturated fat you would get from fattier cuts of meat.
2. Low-Calorie Cooking Spray
Traditional dirty rice often uses butter or oil. By swapping this for a low-calorie cooking spray, you save a lot of calories. It stops the food from sticking to the pan just as well as oil, but keeps the meal healthy.
3. Lots of Veggies
This recipe includes onions, peppers, sweetcorn, and spring onions. Adding vegetables adds bulk to the meal, meaning you can have a good portion size without too many calories.
4. Spices instead of Sauces
Instead of using a jar of sugary cooking sauce, I prefer dried spices like Cajun seasoning and smoked paprika. These add all the flavour you need for this chicken and bacon dirty rice with almost zero calories.
Is this dirty rice Slimming World friendly?
Yes, absolutely! If you are following Slimming World, you will know how important “Free Food” is.
- Rice: Dried rice is a Free Food.
- Chicken (skinless): Free Food.
- Bacon Medallions (fat removed): Free Food.
- Vegetables: Onions, peppers, and corn are all Free Foods (and onions/peppers are Speed Foods!).
- Stock & Spices: Generally Free (though always check your specific brands).
The only thing you need to be careful with is the Cajun seasoning. Most dried spice mixes are Free, but some brands add sugar or flour, which can give them a small Swip value. Always check the app to be sure. If you want to be 100% safe, you can make your own spice mix using garlic powder, onion powder, oregano, paprika, and cayenne pepper.

Step-by-step dirty rice cooking instructions
Dirty Rice is a really simple one-pan meal. Less washing up is always a bonus in my opinion!
Step 1: Prep your protein
Start by making sure your chicken is cut into bite-sized pieces and your bacon is trimmed of all visible fat. This is the most important step for keeping the dish healthy.
Step 2: Brown the meat
Spray a large frying pan or wok with your low-calorie cooking spray. Get it nice and hot. Add your sliced red onion, chicken pieces, and bacon strips. Fry them off until the chicken is browned on the outside and cooked through, and the onions are soft.
Step 3: Add the flavour
Add your smoked paprika, crushed garlic, Worcestershire sauce, Cajun seasoning, and balsamic vinegar to the pan. Stir it all really well so the meat is coated in the spices. Cook this for another 2 minutes. This helps cook the spices so they taste rich rather than powdery.
Step 4: Add the veg and stock
Add your sliced peppers, drained sweetcorn, and chopped spring onions. Give it a good stir. Pour in the chicken stock. Let this bubble for about 4 minutes. The stock will reduce and make a lovely coating for the rice.
Step 5: Mix in the rice
Finally, tip in your cooked rice. Stir everything together until the rice is hot and fully coated. The rice should take on that golden “dirty” colour.
Step 6: Serve
Serve it immediately while it is piping hot. You can sprinkle a little extra spring onion on top if you like.
Tips for the perfect rice texture
The biggest worry you may have is that it will end up mushy. Here is how to avoid it when making this chicken and bacon dirty rice.
Use cold rice
This is the golden rule for any fried rice dish. If you boil rice and throw it straight into the frying pan while it is still hot and steamy, it will break down and turn to mush. Ideally, cook your rice the day before, cool it quickly, and keep it in the fridge. The grains firm up in the fridge, making them perfect for frying.
Rinse your rice
If you are cooking the rice from scratch, rinse the uncooked grains under cold water until the water runs clear. This removes excess starch, which acts like glue.
Don’t over-stir
When you add the rice to the pan, fold it in gently. If you stir it aggressively, you might break up the grains.

How to store and reheat chicken and bacon dirty rice leftovers safely
Rice can be difficult when it comes to food safety. It is not actually the reheating that causes problems, but how you store it before reheating.
Uncooked rice can contain spores of a bug called Bacillus cereus. These spores can survive cooking. If rice is left standing at room temperature, the spores can grow into bacteria, which produce toxins that cause food poisoning.
To keep you and your family safe, follow this advice from the Food Standards Agency:
- Cool it quickly: If you are not eating the rice straight away, cool it down as fast as possible. Ideally, within one hour.
- Fridge it: Keep it in the fridge at 5°C or below.
- Eat it soon: Don’t keep it longer than 24 hours.
- Heat it thoroughly: When you reheat it, make sure it is steaming hot all the way through.
- Don’t reheat twice: Never reheat rice more than once.
If you want to make this dish when batch-cooking for the week ahead, ensure you have containers ready so you can get it into the fridge quickly.
Customising your dirty rice
The best thing about this dirty rice recipe is its adaptability. You can make so many different changes based on what you have in the fridge that needs using!
Make it spicy
If you like heat, add some fresh chopped chillies when you fry the onions, or add a pinch of chilli flakes with the spices.
Change the meat
This works really well with turkey mince or 5% fat beef mince instead of chicken chunks. If you use mince, just brown it off at the start until it is cooked through.
Add more vegetables
Need to use up leftovers? Mushrooms, courgettes, and peas all work brilliantly in this. Just chop them small, so that they cook quickly.
Vegetarian options
Swap the chicken and bacon for Quorn pieces, chickpeas or a tin of mixed beans. Use vegetable stock instead of chicken stock, and check your Worcestershire sauce (some brands contain anchovies, but there are vegetarian versions available like Henderson’s Relish).
Dirty Rice – Frequently Asked Questions
Can I freeze this chicken and bacon dirty rice?
Yes, you can freeze dirty rice. Just like with the fridge rules, you must cool it down quickly (within an hour) and freeze it immediately. When you want to eat it, defrost it fully in the fridge overnight and reheat it until it is piping hot.
Is this spicy?
It has a little kick from the Cajun seasoning and paprika, but it is not overpowering. If you are cooking for young children, you might want to halve the amount of Cajun spice and see how they get on.
Can I use brown rice?
Absolutely. Brown rice is a wholegrain and has more fibre, which is great for digestion. It has a nuttier flavour and a chewier texture. Just make sure it is fully cooked before adding it to the pan. You can read more about the differences in my article on white vs brown rice.
What is a good substitute for Cajun seasoning?
If you don’t have a pre-made mix, you can use a mix of cumin, coriander, and extra paprika. It won’t taste exactly the same, but it will still be delicious.
Can I use packet rice?
Yes, using a pouch of microwave rice is really convenient. You don’t even need to microwave it first. Just squeeze the pouch to break up the rice and tip it straight into the pan.
My Thoughts
Healthy eating doesn’t have to be complicated or boring. This chicken and bacon dirty rice is proof that you can have a hearty, flavour-packed meal on the table in under 30 minutes. It is cheap to make, easy to cook, and works perfectly for the whole family.
