This is an easy slow cooker chilli con Carne recipe, which can be easily adapted to a vegetarian chilli or a vegan chilli is really easy to make especially in the slow cooker.

If you have been looking for a Slimming World chilli con carne recipe that can be made in the slow cooker then this could definitely fit what you are looking for.
Whilst there is an official Slimming World recipe for Chilli Con Carne on their website, I think this is just as good and you do not have to be a member to access it!

Can I make this a Slimming World Chilli Con Carne – are the ingredients free foods?
All of the ingredients in this recipe are free on the Slimming World plan. If you follow the old green days then you would need to reconsider however on the EE plan or the SP plan this is perfect.
Minced beef is considered free on Slimming World if it is 5% or less fat so ensure you use lean mince such as this in your recipe.
When you make chilli con carne in the slow cooker it isn’t essential to brown the beef first. Some people prefer to but I have never seen any difference. There is the option of draining fat off higher fat mince but this is not advised by Slimming World and personally, I would not advise it either.
The reason I would not advise you to drain the fat off mince is that you do not know how effective that has been and it could be a big difference in the calories you are consuming.

Can you make a Slimming World chilli con carne using this recipe on the hob instead?
Yes, you most certainly can. This recipe can easily be made on the hob using the same ingredients.
First brown the mince then when it is almost cooked add the vegetables and fry for a further 5 minutes with the chilli, chilli powder and paprika.
After the vegetables are cooked with mince and spices, add the kidney beans and tomatoes and allow to simmer for around 5-10 minutes to allow the flavours to develop well.
What should I serve with chilli con carne?
If you are trying to stick to the Slimming World plan and avoid using any syns then you can simply serve this with rice, chips, or wedges as long as they are also syn free.
If you are happy to use some syns for your chilli con carne then you can add some tortilla chips either homemade or shop bought for a few syns.
This slow cooker chilli con carne recipe is perfect to add to taco shells or wraps too, those are syns on Slimming World so you would need to count these.
Sour cream goes perfectly with chilli, especially in a taco or wrap but shop-bought versions are usually high in fat and counted as syns on Slimming World. I have a healthier version of a sour cream that I enjoy making, you can find this in my dips roundup if it takes your fancy.

Could this recipe be used for chilli-loaded wedges?
If you fancy chilli-loaded wedges then this recipe is perfect. Depending on your preferred portion sizes you may like to reduce the recipe a little or save some of the mixture for another day.

How to make chilli con carne in the slow cooker
It honestly couldn’t be easier, simply put all the ingredients in the slow cooker, mix them up and turn it on!

Making an easy vegetarian chilli using this recipe
I have been a vegetarian since I was 10 years old and enjoy a huge variety of food so whatever you do, don’t let being vegetarian mean you need to eat a boring diet.
An easy way to make a meal vegetarian is to swap the meat for a vegetarian alternative such as Quorn. Other possible swaps are jackfruit, lentils, chickpeas, mixed beans or just extra vegetables. All of those could be used to make this chilli vegetarian, or even to make a vegan chilli.
Be careful to avoid chilli oils if you want this to be a Slimming World chilli con carne recipe as they are high in calories and high in calories and syns. Plus, chilli oils are truly not necessary!

Making this chilli with Quorn
It is really easy to adapt this easy slow cooker chilli recipe to use Quorn, as a vegetarian myself I do it often. It is always worth remembering that Quorn takes less time to cook when substituting it for mince.
You can still cook this recipe according to the instructions below in the recipe card but if you are short of time it is just as good to reduce the time if using Quorn. In the slow cooker, Quorn chilli should cook for 3 hours on high or 5 hours on low.

Tips for Chilli in the Slow Cooker
Before you start to think about recipes like this slow cooker chilli con Carne here are a few tips which may help.
If you find your Slimming World chilli is a bit watery take the lid off the slow cooker and turn it up high for half an hour this can help evaporate some of the water.
Using Slow cooker liners can save washing up if you are making something that often sticks. There are also silicone liners available if you prefer something reusable that can easily be put in the dishwasher.
If you are using one slow cooker to make a vegetarian chilli and a beef chilli then there are slow cooker dividers which use two silicone lines to make the slow cooker half and half. There are even 4-in-1 dividers available!
Remember that nothing evaporates so you may need less liquid than in other recipes eg on the hob. Whilst on the whole, this doesn’t affect this chilli recipe, if you are wanting to put the chilli con carne in wraps or for loaded wedges you may prefer to use less chopped tomatoes or drain them a little.

Ingredients tips for this slow cooker chilli con carne
If you have an abundance of red peppers and prefer to use just those in this recipe without orange or yellow peppers that is just fine. Any peppers work in it well but I usually avoid too many green peppers as they can be bitter.
If someone in your family prefers a milder chilli you could use less chilli in the whole recipe or give them some soured cream to add to their portion. I have a healthier version of sour cream you should try in my dips guide.
If you do not have smoked paprika for this recipe you could use normal paprika or simply omit this from the recipe. It is not essential but adds to the flavour nicely.
Grated cheese goes on top of this slow cooker chilli well but it is a bit of a marmite thing. Some people love grated cheese on top of chilli, others hate it! Personally, I love it!
If you prefer to increase the beef flavour in the recipe it is easy to add a beef stock cube or two. I personally do not think it necessary but it is easy to add one if it is to your preference.

500 Grams 5% Fat Mince Beef
400 Grams Red Kidney Beans (Drained)
400 Grams Can of Chopped tomatoes
50 Grams Red Chilli (deseeded and finely diced)
