What is quinoa?

Quinoa is like a grain but actually is a seed and is pronounced keen-wah. It is used in a similar way to couscous.

Quinoa is high in protein and as such keeps you feeling fuller for longer which is great if you are trying to lose weight. It is usually used in main meals but can also be used for breakfast or in sweet desserts. This quinoa breakfast bowl is delicious.

Budget shopping tips

I try to ensure all of the recipes I make are accessible to everyone. By this, I mean that they do not use obscure hard-to-find ingredients.

I also believe that recipes should use as few ingredients as possible and avoid expensive ingredients. We would all much rather spend money on holidays than expensive ingredients wouldn’t we?

Buying herbs and spices in bulk is something I really recommend. It can save a lot of money in the long term but also mean you never run out! I find putting them on Amazon subscribe and save helps too! Additionally don’t forget to check out the yellow sticker reductions and freeze what you can.

Frozen vegetables are nutritionally just as good as fresh usually so do keep an eye for those too to save money. Do you have any particular frozen vegetables you love? Do share them with me it is always nice to hear people’s recommendations.

Description

Quinoa breakfast bowl for an easy breakfast for one


Ingredients

Scale

1/2 cup quinoa, rinsed

1/2 cup of milk

1/2 cup of water

Broccoli, cut into florets

Mushrooms, sliced

Cheddar cheese, grated

Salt & pepper, to taste

1 egg


Instructions

Heat a little bit of olive oil in a pan over medium-high. Add broccoli and mushrooms, and stir-fry until cooked (around 5 minutes). Remove from heat and set aside. 

Combine milk, water, and quinoa in a large saucepan. Bring to a boil, then reduce heat to low. Simmer, stirring regularly, until most of the liquid has been absorbed.

Add vegetables, cheese and salt & pepper to the pot of quinoa and stir to combine. Cover and set aside. 

Fry a sunny side–up egg. 

Transfer the quinoa to a bowl, then top with the egg.
