Spinach and mushroom frittata recipe

If you have never made a frittata then you really do not know what you are missing. An easy to make meal perfect with a salad or chips you will soon be making them regularly.

This spinach and mushroom frittata is full of flavour and nutrients as we all know how good spinach is for iron.

When to enjoy a frittata

This frittata is a perfect meal for when you get in after a busy day. It is quick to make and when served with a handful of salad it makes a tasty nutritious meal.

If you are cooking something else for tea this would be a great meal to easily cook alongside it to enjoy for your lunch the next day.

The frittata is tasty cold with salad so could be your lunch sorted for a couple of days in just a few minutes.

How to make this frittata on a diet

If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan this is a great recipe to try. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe card below.

This is already I believe a syn free recipe on Slimming World and includes lots of vegetables so could be enjoyed on its own but a third of this recipe wouldn’t be a particularly big portion. We all know I love food and there is no way I could survive only eating this for a meal.

To make it into the perfect full meal one option is adding a handful of salad as I have already suggested. If you want to make it more filling still then how about making some homemade chips and adding those too?

This is how I make what I believe is the perfect homemade chips.

Another way I would enjoy this meal is with couscous such as this vegetable couscous. As both could be enjoyed cold it is a perfect filling lunch made easily too.

Ingredients

Scale

Low-calorie cooking spray in olive oil variety

130g of mushrooms cleaned and sliced

1/2 small white onion chopped

1 clove fresh garlic crushed

150g of spinach washed and dried

4 eggs

2 egg whites


Instructions

Preheat the oven to 190°c/375°F/Gas 5. 

Fry the onion and garlic in a frying pan (with an ovenproof handle) until translucent and soft. Add the mushroom and let it cook with the rest of the ingredients until they have shrunk and softened up.

Add the spinach to the mixture and cook until they are wilted.

Whisk together the egg and egg whites in a separate bowl and pour over the mixture in the skillet.

Place the frying pan in the oven and bake for 12-15 minutes, or until browned and eggs are completely cooked.

  1. We really enjoyed this for a quick lunch. Next time, I’ll definitely have a few new potatoes and a side salad to go alongside. Really tasty frittata – might add a little more garlic next time too.
