Why homity pie is so amazing
If you follow Slimming World then you will know many vegetables are referred to as speed foods. This recipe is full of vegetables whilst also being tasty and stodgy.
This is a perfect recipe for when you want something warm, filling, and stodgy but still healthy!
I always add to the vegetables by serving it with something like broccoli or carrots too.
Trying vegetables cooked differently or with herbs and spices can make them a little more exciting too. Homity pie is lovely with all sorts of vegetables.
Eating homity pie on Slimming World or other diets
Homity pie is a great filling meal for everyone whether they are on a diet or not. That said, all the ingredients fit well to make this a Slimming World homity pie, or sw homity pie if you prefer.
Instead of finding another homity pie recipe and trying to make that homity pie Slimming World friendly, this one is already there and avoids having to make adaptions.
Simply measure the amounts of cheese used so you can calculate for each portion and it is easily a Slimming World pie the family will love.
Step-by-step instructions for Homity Pie
1. Preheat oven to 220°c, 200°f or Gas 7.
2. Boil potatoes for around 20 minutes until tender, drain and then mash.
3. In a large frying pan sprayed with low-calorie cooking spray, stir-fry the onions.
4. Add leeks as soon as onions start to fry and cook for 6 minutes adding the peas a minute before the end.
5. Add the mashed potato, garlic, eggs, stock and 100g of the cheese and combine.
6. Spoon the mixture into a large casserole or oven dish and then top with the remaining 80g of cheese.
7. Bake for 25 minutes or until golden on top.
8. Serve and enjoy! We enjoy it with roasted carrots! It reheats well in the microwave if required.
Making homity pie on a budget
I try to ensure all of the recipes I make are accessible to everyone and do not use obscure hard-to-find ingredients. This recipe simply uses things you will likely have in anyway or can buy at any supermarket.
Don’t forget to check out the yellow sticker reductions around the time you will make this recipe as it uses lots of leeks and potatoes which are often reduced!
Frozen vegetables are nutritionally just as good as fresh so you could use frozen leeks and frozen onions, just be sure to not add the extra liquid that comes out of them in the final dish.
