Delicious healthy apple pancakes recipe perfect for a healthy breakfast
I love pancakes for a weekend breakfast, they always feel like such a treat. These Slimming World friendly apple pancakes are a great low syn option. Having an apple in the pancakes gives a lovely little bit of crunch to the texture plus you are getting one of your 5 a day.

What are the pancakes like?
These pancakes are a bit of a cross between a classic thin pancake and the more fluffy American pancakes. The batter is thin so will spread and cook like a classic pancake but the addition of grated apple bulks out the batter and gives a little height.
You can do larger pancakes filling the pan or carefully spoon the batter for slightly smaller pancakes which I think I prefer.
You could experiment with different flavours like adding orange zest or possibly make some orange breakfast muffins for a nice change?

Do you leave your apple pancake batter to stand?
When I learnt to cook pancakes we would always make the batter and leave it to stand/rest for an hour before cooking. I am a bit more impatient now and tend to only leave it for about 15-20 minutes.
It doesn’t make a big difference so I would go with whatever works for you on the day. If you don’t have time to let it rest, don’t worry. If you do rest the batter with this recipe do it before adding the apple.
If you are short of time then have you tried making a pancake in a mug? I know it sounds crazy but it really is a thing and it is delicious!

Cooking apple Pancakes
Making pancakes is really easy however it does take a bit of practice to get them just right. One of the most important things is to start with a hot pan. This will ensure that the batter starts cooking as soon as it hits the pan. However, you don’t want it too hot as it can catch and burn easily.
With the apple in the batter, it is important to keep it mixed through so that you can cook it evenly. The apple does add a little moisture so you do need to cook a bit longer on the base than you would with a plain pancake.

Topping
Apple pancakes are always best served immediately while still warm. I love a creamy element with my pancakes so some quark or fat-free fromage frais is great for a guilt-free dish. Cinnamon goes really well with apples and is perfect for an autumn/winter taste.
You could also try adding seasonal fresh fruit to satisfy your sweet tooth, I love spring fruits.

Delicious apple pancakes perfect for a healthy breakfast
Ingredients
100g plain flour
2 eggs
200ml milk
2 Apples
Pinch of salt
Fry light
Quark or fat-free fromage frais (optional)
Ground Cinnamon (optional)
Instructions
Sieve the flour into a mixing bowl and add a pinch of salt
Beat the eggs into a jug
Beat the milk into the eggs
Slowly whisk the milk and egg mix into the flour to form your batter
Peel and grate the apples and mix into the batter
Put your frying pan on a high heat. Once the pan is hot reduce to a medium heat. Spray the pan with fry light low calorie cooking spray
Spoon around 2 tbsp of batter in the pan, moving quickly. Spread the apple in the batter evenly
After around 30 seconds, as the batter begins to set at the edges and lifts easily, flip the pancake over using a slotted turner
Let the pancake cook a little longer on this side (around a minute)
Serve with quark or fromage frais and sprinkle with ground cinnamon.

Great tasty pancakes although just to mention if you’re using milk from you HEA allowance and it’s skimmed then they’re only 4½ syns
Really tasty! I’m not a fan of quark or fromage frais, so I chopped some more apples up, heated in a pan with a little water and some sweetener and a little cinnamon… I know it’s not a creamy element, but it did go nicely.
