Couscous is in my opinion an underused ingredient in summer recipes. It is perfect in salads as it makes them filling whilst also being light and fluffy so perfect for hot sticky weather.
What is couscous?

I always like to keep some couscous in because it is a great addition to meals such as stuffed peppers making them filling. Couscous can also be used by adding a handful to a casserole if there is too much liquid as it quickly absorbs some.
Mixed vegetable couscous
This wholesome vegetable couscous recipe was inspired by a couscous dish I enjoyed on holiday in Majorca a few years ago. It has earthy flavours and is filled with vegetables and lentils.
This mixed vegetable couscous is great for a summer buffet as well as individual meals and is perfect to take to work too.
Feta and roasted vegetable couscous
Roasted vegetables really do make summer meals perfect in my opinion. We often put some vegetables on the BBQ to roast which is lovely. If you are having a BBQ one day before you intend to have this Feta and Roasted vegetable couscous then you could consider roasting your vegetables in advance.
