I love pasta salad when the weather is as hot as it has been the last few days! Here are my three favourite recipes that I think you must try this year!
Bruschetta pasta salad
Bruschetta is a great dish but as it includes bread isn’t always as healthy and filling as it could be. This Bruschetta pasta salad is a perfect alternative and full of flavour.
If you are following a weight loss plan you should only need to count the olive oil if you choose to use it. This is minimal as you can use as little as 1 tbsp for four portions.
I believe that other than the oil the bruschetta pasta salad is syn-free on Slimming World and perfect on other diets such as Weight Watchers and Noom but do check for yourself to ensure you are in control of your weight loss.
Tomato and mozzarella pasta salad
I love tomato and mozzarella salad and this is a more filling and more in-depth recipe than the basic salad I usually make in minutes. Sometimes I will make this Tomato and mozzarella pasta salad other times I simply add cooked pasta to my usual recipe.
My basic tomato and mozzarella salad recipe is simply halved cherry or baby plum tomatoes, mozzarella balls (Or a cubed block of mozzarella as it is often cheaper!), a handful of fresh basil (shredded) and a good drizzle of balsamic vinegar.
Fruit pasta salad
I love a fruit salad but this fruit pasta salad really is something else! It is filling, refreshing and so tasty I could eat it every day. In fact, as I type out this article I am looking forward to a bowl of it for my lunch!
Fruit pasta salad is made using predominantly berries but there is no reason you can not adjust my recipe to use any fruit you fancy. It is also a great way to use up any fruit that has gone a bit squidgy but isn’t actually off!
