Sometimes in the summer you just want a cold meal that is refreshing and yet filling and a traditional salad doesn’t always do that does it. Have you tried a fruit pasta salad? It is more filling than just fruit and absolutely delicious. I first tried it a few years ago at a Slimming World taster session and wow, it is gorgeous. I thought I’d share this recipe with you.

How to make fruit pasta

It is really straightforward and doesn’t need a recipe!

Using normal dried pasta boil it as usual but in an orange squash mixture instead of plain water. Using sugar-free squash slightly stronger than you would drink is ideal.

When the pasta is cooked strain and leave to cool. Then mix it with whatever fruit you choose.

We love it with defrosted frozen berries and a little fresh fruit as in the photo above. Then hey presto you have a yummy fruit pasta salad.

What makes fruit pasta different?

It is as filling as any other pasta dish however as it is cold and with fruit, it is lovely and refreshing too. It keeps well for a couple of days in the fridge but essentially it is down to the fruit so depends on the age of the fruit you use and how long that keeps.

I guess one way around this would be to make the pasta and then add fruit as needed on a day to day basis.

Do you have any favourite pasta dishes? I have also heard of people using couscous in a similar way. I haven’t tried that but I think I might.

Which fruits are best when dieting?

Fruit is great as an addition to a breakfast or dessert. Most fruits are pretty low in calories and good for you. Avocado has high fats so is one to have in moderation. Other fruits such as bananas are more filling and are more calorie-dense so it is usually better to choose melon or an apple over bananas or avocados.

If you follow a specific diet or weight loss plan then they are likely to have specific requirements which usually align with this.

If you cook, puree or blend fruit it is less filling and can be easier to overconsume. It would be so easy to drink a smoothie with a couple of bananas, a mango and an apple in a big glass and still not feel full yet most people would not sit and eat all that fruit in one go whole.

Fruit pasta salad on a diet

If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan you can usually enjoy pasta and fruit easily. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe card below.
