This healthy Caribbean pepperpot stew slow cooker recipe is easy to prepare in a few minutes for a tasty meal later in the day.
Before you start to think about recipes with your slow cooker here are a few tips which may help. If you find your meal is a bit watery take the lid off the slow cooker and turn it up high for half an hour this can help evaporate some of the water.
Using Slow cooker liners can save washing up if you are making something that often sticks.
Remember that nothing evaporates so you may need less liquid than in other recipes eg on the hob.

Making a vegetarian Caribbean pepperpot stew
This meal can easily be made vegetarian by using Hendersons relish instead of Worcestershire sauce and a substitute for the beef. Instead of beef using young jackfruit would work well or alternatively a Quorn beef style product. If using Quorn it will need less time in the slow cooker to cook thoroughly so do keep an eye on that.
An easy way to make a meal vegetarian is to swap the meat for a vegetarian alternative such as Quorn. Other possible swaps are for jackfruit, lentils, chickpeas, mixed beans or just extra vegetables.
I have been a vegetarian since I was 10 years old and enjoy a huge variety of food so whatever you do, don’t let being vegetarian mean you need to eat a boring diet.

Description
This tasty Caribbean recipe is perfect for all the family. Whilst it has some spices it could be enjoyed by many children too. Ideal with boiled rice and extra vegetables.
Ingredients
800g Diced lean beef
6 Red peppers, deseeded and cut into bite size chunks
2 sweet potatoes, roughly diced
400g Green beans trimmed but left whole
4 Garlic cloves, crushed
4 tbsp Jerk seasoning
2 tbsp Red wine vinegar
1 tsp Granulated sweetener
700g Passata
400ml Beef stock
400ml Worcestershire Sauce
Instructions
Put all ingredients in the slow cooker and cook on low for 6-8 hours.
