Why fajitas make a great family meal

Fajitas are a great family meal as they are low in fat, high in vegetables and can be adapted to fit the tastes of each family member easily without needing to make different meals.

For those who like spicy food, make some hot salsa for them to add to their fajitas. If you are making them for children or people who like less spicy food be sure to make some sour cream or similar for them to make their fajitas milder.

If you are making for someone who is not keen on onions then simply add less of those and extra peppers. If you are not a fan of green peppers (they can be bitter at times) then perhaps use other peppers instead?

I often also add mushrooms to the fajitas just to increase the veggies in the meal but really it is up to you!

Easy adaptions to the fajitas

This recipe uses chicken however there is no reason you shouldn’t use turkey, beef or any other meat to make fajitas. It really is down to personal taste.

If you choose to use different meat, the recipe should not need to change otherwise however you will need to ensure that the meat is fully cooked before serving.

If you prefer to make these fajitas a little spicier then I would recommend adding an extra teaspoon of paprika and an extra teaspoon of chilli powder. Play around with them each time you make this recipe to get the recipe perfect to your tastes.

How to make the fajitas vegetarian

As a vegetarian myself I can thoroughly recommend using Quorn as an alternative to chicken. Sometimes I just fancy extra veggies so I don’t add a meat substitute and that really suits me. It is entirely up to you.

Another addition I would recommend is Quorn steak strips. Whilst they change the flavour a little and the cooking time will be reduced a little it works well in these fajitas too.

Step by step instructions

Preheat the oven to 190°C/375°F

In a small bowl, combine the seasonings. Mix them with a fork and set them aside.

Slice the chicken breasts and peppers and onion into thin strips.

Toss the vegetables and chicken together on a sheet pan.

Drizzle olive oil over the chicken and veggies.

Sprinkle the seasonings you mixed together in the small bowl over the chicken, peppers and onion.

Toss the vegetables and chicken around on the sheet pan to make sure everything has a gentle coating of seasoning.

Bake for 25 minutes or until the chicken is cooked thoroughly.

Serve with tortilla wraps.

How to serve sheet pan fajitas

Depending on your family you can serve the fajitas ready-made for everyone, wrapped with cheese, sauce etc already, however it is they like it.

Another way, and by far my favourite is to give everyone an empty plate and put all the ingredients in the middle for each to make their own fajitas.

As I am a vegetarian I tend to find giving everyone their own small bowl of cooked chicken and veggies (or Quorn for me) is the best way of serving then placing the dips and wraps in the middle of the table. This is also great as it ensures children have vegetables and don’t get to pick out just the chicken!

What you have with your fajitas is truly up to you. Some people love a mixture of dips, others fancy just grated cheese. I have some great recipes below you might like to try.

Description

Ingredients

400g of chicken breast, cut into strips

3 bell peppers (1 red, 1 green and 1 yellow pepper)

1 small onion

1 teaspoon of chilli powder

A pinch of dried oregano
