Healthy and easy mushroom risotto recipe

I love risotto and love to create in the kitchen trying to achieve the perfect recipe. This one for an easy mushroom risotto I think is absolutely delicious.

Risotto tips

Risotto is one of my favourite meals, it always feels so filling and stodgy whilst often having many vegetables in so being actually quite healthy. Once you master the basic way of making it you can easily adapt recipes for new flavours.

I prefer Arborio rice for risotto, it is perfect for the way you cook risotto and works better than long grain or basmati rice.

Risotto is always more stodgy and well-cooked if you reheat it so if you are saving some for another day remove it from the pan before you have finished cooking it.

Always use a bigger pan than you think you need. It is surprising how much you end up making and whilst simmering it is easy for it to splash.

Which mushrooms to use in this easy mushroom risotto

Whilst this recipe uses mixed mushrooms you can truly use any you like. If you have dried mushrooms why not rehydrate them and use those. Add some garlic to make a similar recipe to my garlic mushroom risotto or even use mushrooms you have grown yourself.

I find this recipe works well when I have bought lots of reduced mushrooms from the supermarket!

Side dishes perfect to accompany Mushroom Risotto

1. Rocket Salad with Lemon Vinaigrette

This peppery green salad balances the richness of risotto. Toss rocket with a zesty lemon vinaigrette, and sprinkle with shaved Parmesan and toasted pine nuts.

2. Steamed Asparagus

Keep it simple with lightly steamed asparagus spears. Drizzle with olive oil and a pinch of sea salt. For a bit of pizzazz, add a sprinkle of lemon zest.

3. Roasted Cherry Tomatoes

Sweet and juicy roasted cherry tomatoes offer a burst of flavour and colour. Roast them with a touch of garlic and thyme.

4. Sautéed Spinach with Garlic

A quick sauté of spinach in olive oil with minced garlic adds a leafy green goodness to your meal. Perfect if you are often short of iron in your diet.

5. Crispy Kale Chips

For a crunchy contrast, kale chips are the way to go. Simply toss kale in olive oil, sprinkle with sea salt, and bake until crisp. They disappear almost as quickly as they bake!

6. Grilled Courgette Ribbons

Grilled courgette ribbons add a subtle smokiness to your plate. Simply grill thin slices of courgette and season with salt, pepper, and a touch of balsamic glaze.
