If you follow Slimming World then you will know many vegetables are referred to as speed foods.

Vegetables are low in calories compared to their density. This essentially means that they fill you up with very few calories.

The more vegetables you have in a meal either as a side dish or mixed in with the meal itself the lower-calorie the meal tends to be. A filling but low-calorie meal is perfect for weight loss.

All my recipes, including this slow cooker sausage casserole, include vegetables where possible but do feel free to add more as an accompaniment when you can.

This recipe is so easy to make you could do it in your sleep, pretty much! Simply cook and brown the sausages if you prefer and add everything to slow cook while you get on with other things. It really is fuss-free!

If you have made this before and want to make a few adaptions then the ones I would suggest are:

Add cannellini beans for extra protein. This is a great addition for vegetarians or those trying to increase the protein in their diet.

Put it in a casserole dish to cook in the oven for a quicker dish, I would recommend around an hour depending on the dish you use.

Add a vegetable or beef stock cube for a bit of extra salt and flavour if you prefer.

I try to ensure all of the recipes I make are accessible to everyone. By this, I mean that they do not use obscure hard-to-find ingredients.
