Carrot & Ginger Soup

Carrot and ginger soup is one of the best, healthy winter soups you could try. It is light, comforting and packs in the goodness of two delicious and healthy root veggies, making it an excellent dinner option. 

Start by sauteing some chopped onions and carrots in a saucepan with some olive oil, ginger and salt. Once they soften, remove them from heat, allow them to cool down a bit before you puree them. Add some stock to this mixture along with the juice of a lemon and bring it to a boil. Garnish with some chopped parsley over the top! 

Soothing Lentil Soup

Packed with protein and super flavorful- that’s what this soothing lentil soup is all about. All you need to do is saute the veggies of your choice (carrots, celery, onions, ginger, garlic, cabbage and potatoes are excellent choices) with a bit of oil in a saucepan until they soften. Then add in the spices and herbs of your choice (chillies, turmeric, thyme, oregano, salt and pepper taste great) with some stock and lentils (a mixture of green and red ideally) and cook until the lentils get soft, and that’s pretty much it.

Creamy Mushroom Soup

Mushroom lovers will absolutely dig this easy healthy winter soup recipe. It is perfect for the winters when you’re looking for a simple comfort food recipe you can’t go wrong with. All you need to do is first saute some onions, celery, mushrooms, thyme and garlic in a saucepan with some olive oil until they all soften. Then add some stock into it and allow it to come to a boil. 

Using a stick blender, blend the mixture until it becomes smooth, season with salt and pepper and add in some cream before giving it a final stir. That’s it!

Cheesy Chicken Soup

And of course, you just can’t go wrong with chicken soup right? Start by cooking chicken cubes in a bit of butter until they lose their pink colour and remove and set them aside. Add some more butter to the pan, a tablespoon of flour and cook it with some whole milk until the mixture turns creamy. Add in some grated cheese, season with some salt and pepper and add the chicken (shredded) into it. Comfort food at its best!

Italian Meatball Soup

Filling, healthy and super delicious- that’s what this Italian meatball healthy winter soup is all about. A great alternative to spaghetti and meatballs. Start by sauteing some carrots and celery in a pot and adding in some broth, tomato paste, pepper, salt and chopped garlic and cook for 10-15 minutes. Now add in some meatballs (sear them in a pan with a bit of olive oil before) and cook for an additional 2-5 minutes. If you are planning how to feel good this winter then you need to add a healthy diet to that. Whether you follow a weight loss plan or just eat a little healthier it should be easy to plan a healthier winter. A few simple swaps like grilled chicken instead of fried chicken could make all the difference.
