The importance of adding vegetables to your low-fat curry recipe

Vegetables are low in calories compared to their density. This essentially means that they fill you up with very few calories.

The more vegetables you have in a meal either as a side dish or mixed in with the meal itself the lower-calorie the meal tends to be. A filling but low-calorie meal is perfect for weight loss.

All my recipes include vegetables where possible but do feel free to add more as an accompaniment when you can. Always choose vegetables that you enjoy because otherwise you will begrudge eating them and are more likely to before long stop cooking them at all.

Making a meal vegetarian easily

This mild low-fat curry recipe is easily made vegetarian with Quorn or Tofu instead of chicken but equally, you could just use lots of vegetables instead if you prefer.

An easy way to make a meal vegetarian is to swap the meat for a vegetarian alternative such as Quorn. Other possible swaps are for jackfruit, lentils, chickpeas, mixed beans or just extra vegetables.

I have been a vegetarian since I was 10 years old and enjoy a huge variety of food so whatever you do, don’t let being vegetarian mean you need to eat a boring diet.

Making this recipe with Quorn

It is really easy to adapt this recipe to use Quorn, as a vegetarian myself I do it often. It is always worth remembering that Quorn takes less time to cook when substituting it for chicken.

Using frozen chicken

Chicken for this mild low-fat curry recipe or any other chicken recipes should never be cooked from frozen, there are so many issues with this that risk food poisoning.

Description

This mild low-fat curry with chicken is easy to make and a perfect family meal with its delicate spices ideal for all the family.


Ingredients

Scale

4 Chicken breasts cut into bite size chunks

2 Garlic cloves, crushed

2 tbsp finely chopped fresh ginger

2 tsp granulated sweetener

2 large onions, roughly chopped

10 Mushrooms, quartered

2 tsp Mild curry powder

Pinch of salt

1 tsp Coriander, ground

1 tsp Cumin, ground

1 tsp Turmeric, ground

0.5 tsp Garam Masala

0.25 Mild chill powder

4 Cardamon pods, lightly crushed

250ml Passata

200ml Chicken Stock

300g Fat Free fromage frais

2 tbsp Chopped fresh Coriander


Instructions

Spray a large frying pan with low calorie cooking spray and place over a medium high heat.

Fry the onions, garlic, ginger, curry powder, cardamon pods and ground spices for five minutes until tender.

Add the Chicken and fry gently until browned and cooked throughout.

Turn the heat to medium and add the passata, stock, sweetener and mushrooms and cook for a further 10 minutes.

Remove from the heat and allow to cool for 5 minutes then gently stir in the fromage frais before serving.



Notes

If you wish to freeze this dish then freeze before adding the fromage frais then add that once it is reheated.

  2. Just Average Jen’s recipes are amazing I would definitely recommend this delicious Mild Chicken Curry. Although I do prefer my curries “Hot” lol!! Following these recipes and doing this every day has not only helped me lose weight and keep it off, hope it helps others too!
